For our wholemeal penne rigate made from khorasan wheat, we only use wheat grown in Italy. Alce Nero khorasan wheat penne are produced by hand. The artisan production process of the penne takes 3-4 days. Slow processing is the secret to obtaining a stronger pasta that holds up better to cooking.
